Description
EL NIÑO HARVEST 201650g (1.76 oz)
Ingredients: 78% Cacao beans, cane sugar
Variety: Heirloom Nacional
Start with heirloom Nacional cacao from Piedra de Plata, add torrential El Niño rains followed by an unexpected drought during the critical ripening period, and top it off with an unusually late harvest forced by a 7.8 magnitude earthquake. Single-origin Ecuadorian dark chocolate at its most complex
Profile
Nose: Wood with a touch of flowers.
Palate: Ripe banana, mint/eucalyptus, earthy red fruits.
Finish: Muscular, enigmatic, highly complex.
This edition work best with sweet fortified wines, especially PX Sherry and also port. Zacapa 23 rum is always a sure winner. Irish whiskies and sherry-finished single malt Scotch whiskies also work, as does cognac if properly aged. Arguably the best pairing partner for this edition is cheese, such as Brie, Manchego, aged Gouda, Comté, Gruyère. You will find that it strongly accentuates the nutty notes in both cheese and chocolate.
